Gwan Yin Recipe for Rice Porridge

Rice porridge (known as congee or jook in China) is an excellent beginning to the day or can be used as a base for the addition of other foods depending upon the situation.

Add a half a cup of rice to 4 cups of water and cook slowly in a pan for 4 hours on the lowest heat possible. The best way to cook it is to put in the oven overnight. The rice will be very soft and is very nourishing when cooked in this way.

For breakfast, add a little grated ginger and stewed fruit and honey.

Other additions:

For a sweet type to nourish the Spleen add brown sugar or honey and sliced fresh root ginger.
To nourish the Spleen and Stomach add honey and milk.
To nourish the Blood, add green leafy vegetables, fresh root ginger. As an option you may add finely chopped lamb's liver.
To strengthen the Kidney, add walnuts and chestnuts. As an option add finely chopped lamb's kidneys.
To remove Dampness and Heat, add purslane.
For hot weather, add mung beans.
